Grappa Ornellaia is obtained from the distillation of the marc coming from the Cabernet Sauvignon and Merlot grapes, harvested on the Ornellaia Estate in Bolgheri. After fermentation, the marc is drawn off from the tanks and pressed, and immediately taken to the distillery. This ensures that distillation is carried out using the best quality marc possible which is rich in alcohol and with good aromatic characteristics. A final rigorous selection of the different grappa ‘lots’ is then made after distillation. Only the best lots – i.e. the ones with most elegance and balance, are blended, and then introduced into barriques for a 18 month ageing period before being bottled.

The fermented grapes, used for grappa, are transferred to the distillery after racking and a pressing. Giving more rapidly the marc to the distillery, you can ensure raw material rich in aromatic substances and alcohol yield more, and anyway the whole, a better quality grappa. |
