The month of January is mild and not very rainy, while the end of February is the beginning of March were characterized by cold and snow, followed from the average rainfall that contributed to rebalance the water reserves of the land. The rains of spring and early summer have slowed the stage slightly of berry development. The warm climate is characterized by excellent temperature excursions starting from the second half of July up to the whole month diagosto, has favored slow and regular ripeness. Lavendemmia del Sauvignon Blanc has begun towards the end diagosto and ended with the collection of Sémillon in the middle of September. The grapes were healthy, mature, distinguished by an excellent freshness and a excellent aromatic profile.

Vinification: The moment of the harvest of Sauvignon Blanc and Sémillon was chosen by seeking a balance between sugar concentration and maximum expression of grape fragrance. The bunches, manually picked, were immediately transferred to the cellar and cooled through a refrigerated conveyor which, by lowering its temperature before pressing, preserved their characteristics. After pressing, the must was kept for a few hours at a temperature of 10 °C to allow for natural clarification, then transferred to stainless steel tanks for alcoholic fermentation, which occurred at temperatures not exceeding 16 °C. The wine was preserved at around 10 °C to prevent malolactic fermentation and maintain its organoleptic qualities. The two varieties were then combined to create the final blend.
