2018 has been a freshness year, marked by precipitation capable of favoring the correct development of the vegetative cycle of the vine. The month of January is mild and not very rainy, while the end of February is the beginning of March were characterized by cold and snow, followed from the average rainfall that contributed to rebalance the water reserves of the land. The rains of spring and early summer have slowed the stage slightly of berry development. The warm climate is characterized by excellent temperature excursions starting from the second half of July up to the whole month diagosto, has favored slow and regular ripeness. The collection is initiated by the decade declined with healthy, ripe grapes, characterized by an excellent freshness and taste an excellent aromatic profile.

Upon arrival at the winery the bunches were de-stemmed and softly pressed. The must with its skins was cooled to 10 ° C and transferred to stainless steel tanks for a short maceration of about 2-4 hours for the purpose of extract and enhance the aromatic and gustatory profile of the grapes. The different lots were transferred partly in wood and in part in stainless steel vats where the alcoholic fermentation took place at a controlled temperature of 16-18 ° C; only the quotain wood faced the malolactic fermentation. Ilvino was then later assembled and bottled. |
