Born in the 80s from the passion for enology of a lady from Germany, Casanuova delle Cerbaie is located in the northern ilcinese area and was soon known in the wine industry thanks to the production of elegant and quality wines.

In 2008, the farm became the property of a New York entrepreneur in love with Tuscany who has made improvements to the structure and has allowed to further increase the quality standards of the products.

The vineyards of Casanuova delle Cerbaie extend for 10 hectares (mostly used to cultivate Sangiovese grosso) and develop in the south-west, in the prestigious hill of Montosoli.

The processing of the grapes, to ensure maximum respect for the peculiarities of each grape, is carried out manually and provides, before proceeding with destemming, a careful selection in the sorting table. The fermentation is subject to frequent pumping over and a controlled temperature that is made to reach up to 31 degrees centigrade, and then be dropped naturally until the racking. The aging takes place first in Slavonian oak barrels, then inside the bottle, before the sale.
