Cava d’Onice is the winery located in Montalcino that has managed to make an international name for itself despite its small size and recent history.

Unlike some of the great names of wine cellars in the Ilcinese territory with ancient origins, this is the story of a great dream, that of its founder.

Wine has always been a part of Simone’s life… when he was a child and accompanied his father as a cellarman in the winery, when he started working at the age of fourteen in the vineyard and began to understand the vegetative cycle of the vines, the care needed to produce a good wine and the grafting to create new vineyards, until his passion for wine-growing turned into Cava d’Onice, the winery he runs with his wife.

The vineyards are cultivated exclusively with Sangiovese grosso and used to produce Brunello di Montalcino and Rosso di Montalcino.

Among Cava d’Onice’s excellences are: Brunello di Montalcino (vintage, in the “Colombaio” or Riserva version) and Rosso di Montalcino.
