after malolactic fermentation, the Brunello di Montalcino is transferred to French oak barriques (20% new, 80% second and third passage). Wood aging lasts for two years, as laid down by the Brunello regulations. The full maturation of this complex wine requires further bottle aging for at least 24 months before its release on the market. |

l’uva viene raccolta manualmente e trasportata in cantina in piccole casse da 20 Kg. Un’accurata selezione manuale del grappolo e dell’acino viene effettuata prima della pigiatura. Il riempimento delle vasche di vinificazione avviene per caduta naturale, senza ausilio di mezzi meccanici. La fermentazione alcolica si protrae per 18 giorni, ad una temperatura di 28°C. |
